Sometimes I love a summer salad that has no lettuce. Lettuce with the heat and humidity sometimes wilts so quickly! This has always been my favorite summer salad…it’s refreshing and incredibly nutritious.

It pairs wonderfully with quinoa or rice and actually sometimes I mix it into quinoa and make it a meal!! The parsley in this salad actually provides a ton of flavor and also great nutritional value. Believe it or not parsley is actually pretty high in vitamin C and a great source of folic acid among other nutrients!

It does require a bit of chopping but it’s completely worth it! Store it in glass in the refrigerator and it actually tastes better the next day after all the flavors have marinated! Enjoy! Happy Summer!

3-4 tomatoes (on the vine or roma seems to taste best to me)
1 red onion
1-2 cucumbers (small to medium)
3-4 tablespoons chopped curly parsley
The juice of 1/2 of a lemon
Salt/Pepper to taste

Chop the tomato, onion and cucumber into small cubes/chunks and mix in bowl. Add the parsley and the juice of 1/2 of a lemon (feel free to add more citrus if you love it). You can also add 1/4 cup of spring water that gives it a medium to marinate in. Then salt and pepper to your liking. Again if I am serving this with a meal I like to make it ahead of time so it can marinate together in the refrigerator for at least a few hours!
