Many of you are thinking well it’s winter therefore it’s the season for stew but there is another reason for this stew recipe. After recently going through a phase where I needed major gut healing (don’t worry the story about that is coming soon) I started researching hearty and wholesome stews I could make that wouldn’t inflame my gut and would help restore the gut lining. So really what I mean is it’s the season for healing and this stew turned out to be the perfect remedy!
I wanted something that would be filling because I am eating small meals and get hungry often, but also would be nutrient dense. So yes, this is a typical stew but with a couple variances that make it extra healing. Check out the recipe below. Its a crockpot deal so you throw it all in on a Sunday for the rest of the week meals!
1 bunch organic carrots
2 organic leeks
1 organic onion (great pre-biotic)
4 organic red potatoes
5 small purple organic potatoes (I had them in the house so I threw them in)
1 organic fennel bulb (amazing for digestion)
PUT ALL THE ABOVE INGREDIENTS IN THE CROCKPOT AND ADD:
2lbs white oak pastures grass fed stew meat (or any other local grassfed stew meat)
2 boxes organic pacific vegetable broth
COOK OVERNIGHT ON SLOW AND LOW SETTING (10+ hrs)
ADD DASHES OF HIMALAYAN SEA SALT AND BLACK PEPPER FOR FLAVOR
When I serve this I add 1/2 cup of my homemade bone marrow broth to it to up the healing quotient!! (this is gut healing magic)
